Cooking on the Couch with Dale Schnell

KTCHN Dale SchnellIn a column called Cooking On The Couch, the team at CBS New York invited Dale (schnell schnell) Schnell, the executive chef at the Midtown eatery KTCHN to cook two recipes. Without revealing what this concoction is, I will share the ingredients of the South American version:

8 oz. Chocolate 72%
3/4 Cup Heavy cream
1/4 Cup Corn syrup
1/8 Cup Vegetable Oil
1/2 Cup Milk

Ground Spices:
o 1 tsp.. Cinnamon
o 1/4 tsp. Pink pepper
o 1/4 tsp. Star anise
o 1/4 tsp. Cayenne pepper
o 1/2 tsp. Nutmeg

2 oz Gruyere cheese
2 oz Comte cheese
2 oz Vacherin cheese
4 oz White wine
2 oz Vegetable stock or water
1.5 Tablespoons cornstarch
1/2 tsp salt

The stuff is great, proof that everything tastes better with garlic ‘n cheese. The advertisin’:

Rich and savory, this sausage is filled with melt-in-your mouth goodness: whole roasted garlic cloves from Christopher Ranch in Gilroy, California and real chunks of Gruyere and Swiss cheese. Try it mixed with linguini, a dash of red pepper flakes and a big handful of arugula.

Arugula, who eats that stuff? Just remember, jokes about German sausage are the wurst.
